Thermal oil carries heat at high temperature without the pressure a steam system of the same temperature would require. That single property is why presses, laminating lines and reactors are heated with oil rather than steam: 300 degrees Celsius in an oil circuit runs at near-atmospheric pressure, where steam at the same temperature would need roughly 85 bar.

The trade is that the fluid itself is a consumable. Thermal oil degrades through thermal cracking and oxidation, and degraded oil coats heater tubes, which raises film temperature, which accelerates degradation further. Annual fluid analysis is the cheapest insurance in the system.
